Preheat the oven to 425 and line 2 baking sheets with parchment paper or silpat.
Add the milk, butter salt and ½ C water and bring to a boil. Add the flour and incorporate until it pulls away from the sides of the pot. Should take a few minutes. Transfer mixture to a stand mixer and add the eggs one at a time. Wait for each egg to be incorporated before adding the next one. Once all incorporated add the cheese and mix until well distributed.
Using a 1 oz disher, portion the batter onto the baking sheets. Place baking sheets into the oven and immediately lower temp to 375. Bake until firm and golden. About 25-30 minutes.
Swap baking sheet positions in the oven half way through.

After many years of making Gougere, I have discovered that it is easier to just move the dough to a stand mixer and slowly add the eggs and cheese per the recipe. Follow as written from there.
